Black Bean Soup And Corn Bread

This is on of my favourite meals and it is so simple to make.

All you need is:

  • 2 cups of black beans
  • 1 cup of corn
  • 1/2 cup of cut bell pepper (capsicum)
  • 1/2 cup of cut carrots
  • 1/2 cup of cut green beans
  • 400ml of chicken or vegetable stock
  • 1 teaspoon of cyan pepper
  • 1 teaspoon of chilli flakes

Add all ingredients to a pot, bring to boil then simmer for an hour (at least).

For the corn bread it is a little more work.

  • 1/2 cup of honey
  • 1cup of milk
  • 1 egg
  • 1cup of fine polenta
  • 1 cup of flour
  • 3 tbs of melted butter
  • 2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt

Preheat oven to 220 degrees celsius.

Beat together egg, milk, and honey.

mix all dry ingredients well in a bowl.

Combine all ingredients adding melted butter and mix well.

Spread in to a 8 inch loft tray and bake.

20-40 mins at 220 degrees celsius.
