This is on of my favourite meals and it is so simple to make.
All you need is:
- 2 cups of black beans
- 1 cup of corn
- 1/2 cup of cut bell pepper (capsicum)
- 1/2 cup of cut carrots
- 1/2 cup of cut green beans
- 400ml of chicken or vegetable stock
- 1 teaspoon of cyan pepper
- 1 teaspoon of chilli flakes
Add all ingredients to a pot, bring to boil then simmer for an hour (at least).
For the corn bread it is a little more work.
- 1/2 cup of honey
- 1cup of milk
- 1 egg
- 1cup of fine polenta
- 1 cup of flour
- 3 tbs of melted butter
- 2 tsp of baking powder
- 1/2 tsp of baking soda
- 1/2 tsp of salt
Preheat oven to 220 degrees celsius.
Beat together egg, milk, and honey.
mix all dry ingredients well in a bowl.
Combine all ingredients adding melted butter and mix well.
Spread in to a 8 inch loft tray and bake.
20-40 mins at 220 degrees celsius.
