- 2 cups all gluten free flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dairyfree soy free earth balance butter
- 3/4 cup brown sugar
- 2 table spoons of water in 3 teaspoons of egg replacer
- 2 1/3 cups mashed bananas

I have done gluten free, soy free, egg free, dairy free, because the girl i nanny for has many allergies. Poor girl! yet tis resipe turned out great considering it dosent have any gluten, soy, egg or dairy in it.
Preheat oven to 350 degrees F. Lightly grease a loaf pan.
In a large bowl, combine flour, baking soda, and salt. In a separate bowl, cream together butter and brown sugar. Stir in egg replacer and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into the center of the loaf, comes out clean.
